*PRE-ORDER* This product is made-to-order, and therefore orders needs to be placed 2 DAYS IN ADVANCE to allow time for Four Seasons' Restaurants to prepare and process the duck. It will be delivered every 2 working days between Monday-Saturday. However, if your order contains other items, we will hold your entire order until the duck is fully prepared, before processing through the delivery.  

For example: If you place an order for the duck on Monday, we will deliver your order, along with other items you may have ordered on Wednesday. If you place an order on a Friday, you will receive your order on a Monday, and so on.

PLEASE NOTE: This duck is sold RAW, but has been marinated and air dried for 24 hours by Four Seasons Restaurants. 

Soonfung have exclusively collaborated with Four Seasons' Restaurants, bringing you their most recognisable crispy Cantonese roast duck to enjoy at the comfort of your own home. Four Seasons' has been lauded by the UK edition of the Financial Times as 'the best roast duck in the world'. 

Roast duck takes a great deal of resources to prepare, and few families have the equipment for it. Preparation is the key to a perfect roast duck. For the best results the duck must be thoroughly dried before it is marinated with a special mix of spices and herbs. Traditionally, the actual firing is done in a specially built roasting furnace, which distribute the heat evenly around the ducks body, resulting into a golden crispy outer skin. After trying and testing many samples to get the same results on a conventional home oven, we have joint ventures with Four Seasons to specially design a roast duck meal kit by using a fattier duck that is ideal for roasting in a home oven, with the same crispy-skin results as the restaurants. Roast duck must be eaten while it is warm, before the skin is softened by the moisture in the air.

Storage: Use within 2 days after purchase. Store chilled at 6-8°C. Not suitable for freezing. 

Preparation and Usage: 

Prep: Remove the duck from the packaging and pat dry using a kitchen towel. Leave the duck on a grill rack for 2-3 hours at room temperature. To achieve crispy skin, the duck must be completely dry before placing into the oven. 

Cook: Pre-heat the oven to 200°C and prepare a foiled drip tray at the bottom rack of the oven. Place the duck on a grill rack into the middle of the oven and cook for 15 minutes. Turn the temperature down to 180°C and cook for another 45 minutes. 

Serve: Carefully open the oven as it can by smoky, remove the duck from the oven and leave to rest for 30 minutes. Remove the herb marinades from the cavity of the duck and carve into desired portions to serve. 

Serving Suggestions: Recommended for 4-6 persons. Best to be consumed immediately after preparation for the best texture. Delicious on its own, or with our special sweet soya sauce on the side.
