Similar to Japanese udon, Shanghai noodles are white, smooth, soft and springy to the bite. They can be used as a substitute to Japanese udon dishes. The noodles are typically stir-fried with beef cutlets, bok choy and onion. Alternatively can be used in noodles soups.

Preparation and Usage: Place the noodles in a heatproof bowl and pour boiling water over them. Let the noodles stand for 5-7 minutes before rinsing and draining in cold water. Alternative method: place the noodles in cold water and allow them to soak for 25-30 minutes. Rinse, drain, and then add to boiling water for 1-2 minutes.
