Brown Shimeji Mushrooms are small to medium in size, growing in tightly packed bunches with convex, rounded, button caps and slender stems. It has a bitter taste when served raw, but the bitterness completely disappears upon cooking. Cooked Shimeji has a pleasant, firm, slightly crunchy texture and nutty flavour.
